Vegan Kesar-Mango Lassi

Lassi is a popular traditional yogurt drink that originated in Punjab. Lassi is a blend of yogurt, water, spices, and sometimes fruit. This Mango lassi is infused with Kesar flavor and no yogurt is used to make this sweet and tangy lassi. 

Servings – 3

Ingredients

1 1/2 cups (pulp of approx. 2 big mangoes)

3/4 cup cashew cheese

1/3 cup coconut milk

3 soft dates (soaked and deseeded)

1/4 tsp cardamom 

1/4 tsp nutmeg powder

2-4 strands of saffron (soaked in water or milk)

1 lemon juice

Dry fruits for garnishing

Cashew Cheese

Cashews soaked for 5-6 hrs, then washed 1/4  cup

Water as required. Blend soaked cashew to a thick paste, Let the paste sit for 5-6 hrs till you see the fermentation. Our cashew cheese is ready.

 

Instructions

  1. Add ingredients to a blender except (dry fruits) and blend until completely smooth.
  2. Garnish with nuts and Kesar. Enjoy this chilled or as it is.

 

Variation :

  1. If you want instant mango lassi, instead of cashew cheese then you can add coconut malai, lemon juice (increase qty of lemon). Add all other ingredients and blend to smooth paste. 
  2. You can use any sweet variety of mango.
  3. Increase or decrease dates as per your preference.
  4. Kesar and nutmeg are optional. As this is Kesar lassi, we have added Kesar.
