Ingredients:
For Salad

2 long regular cucumbers, spiralized
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped yellow bell pepper
1/4 cup finely chopped green bell pepper
1/4 cup grated carrot
1/4 cup finely chopped coriander
2 tbsp finely chopped spring onion (optional)

For Dressing
1/4 cup soaked raisins
2 tbsp lime juice
1 tbsp grated ginger
Salt, to taste
3 tbsp water (add more if required)
Instructions:

Spiralize the cucumbers. Cut all the veggies finely.
For the dressing, grind together soaked raisins, lime juice, ginger, and salt. Add water little by little while grinding.
Transfer all the veggies and spiralized cucumber to a large bowl.
Add the dressing.
Garnish with coriander and spring onion.

Note –

  1. If you are on no salt diet skip the salt
  2. You can add 1/2 inch of small green chilly to the dip
  3. Children will enjoy this salad with little of peanut butter or crushed peanuts.
