Baba Ganoush is tasty eggplant dip. This dip is very similar to hummus but the smoky flavour is just amazing. Goes well with Indian dishes like chapati, thalipeeth, paratha and ragi roti. You can enjoy this Mediterranean  dip with veggie sticks as well.

Ingredients

1 Medium size eggplant

1/8 tbsp tahini paste (soak unpolished sesame seed and grind them to fine paste)

2 garlic clove

1 tbsp lime or lemon juice

Salt and pepper

½ tsp to 1 tsp chili powder

1 tsp cumin

Freshly chopped coriander leaves for garnish

INSTRUCTIONS

  1. Roast eggplant on gas flame till done 
  2. Let it cool down and then peel the eggplant skin. Mash the eggplant flesh.
  3. Transfer eggplant flesh to the mixie jar. Add the  tahini, garlic, lime juice, salt, pepper, cumin,  chilly powder and salt. Avoid over-blending.
  4. Transfer the baba ganoush spread to a small bowl. Let baba ganoush sit for a while till all the flavours infuse well.
  5. Garnish with freshly chopped coriander.
