Green Pesto

1/8 cup walnuts
1 cup fresh basil leaves
1/8 cup cashew
1/2 tablespoon lemon juice
1/2 green chilly
2 cloves garlic, roughly chopped
1/2 tsp nutritional yeast
1/3 teaspoon fine rock salt

Method

  1. Roast the nuts for extra flavor in a skillet. Roast over medium heat, stirring frequently (don’t let them burn!), until nice and fragrant, 3 to 5 minutes. Pour them into a bowl to cool for a few minutes.
  2. To make the pesto, combine the basil, chilly, cooled nuts, lemon juice, garlic, and salt in a food processor or blender. 
  3. Add more nutritional yeast cheesier pesto. 
  4. Store the pesto in the airtight container.
