Ingredients :

  • 2 ripe mangoes, finely diced
  • 1 red bell pepper, finely diced
  • 1 capsium, finely diced
  • 1/2 red onion, finely chopped
  • 1 green chilly finely chopped
  • 1/4 cup fresh coriander, chopped
  • Juice of 1-2 limes, to taste
  • Salt and pepper, to taste

Instructions:

  1. In a spacious bowl, combine the diced mangoes, red bell pepper, red onion, chopped green chillies, and fresh coriander
  2. Drizzle the juice of one lime over the ingredients. Adjust the lime juice to your preference for acidity.
  3. Season the salsa with salt and pepper to your liking. Gently toss the ingredients until well combined.
  4. Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to meld together and intensify.
  5. After chilling, give the salsa a final mix and taste test. Adjust seasoning if necessary to achieve the perfect balance of flavors.
  6. Serve the mango salsa as a delightful topping for tofu, or enjoy it as a refreshing dip alongside sliced veggies.
  7. Store any remaining salsa in an airtight container in the refrigerator for up to two days to maintain its freshness.
