Carrot-Beans Sagu

 

Ingredients:

Chopped carrots – 1 cup

Chopped French beans – 1 cup

Steamed bottle gourd – 1 cup

Steamed sweet potato – 1 cup

Spice mix – ( Pepper, Cumin seeds, Coriander seeds, and methi seeds) Roasted and ground – 2-3 tsp

Freshly grated coconut and chopped coriander to garnish

Green chili 1

Curry leaves – 5-6

Unrefined Salt as per taste

 

Method

  1. Steam the veggies in the steamer for 10-12 mins
  2. Blend the steamed bottle gourd and sweet potato to a runny paste
  3. Heat a pan, add some curry leaves and dry roast
  4. Add the bottle gourd, sweet potato paste to the pan and add spice mix powder
  5. Add chopped chili and steamed beans and carrot chopped
  6. Let it cook for 2 mins
  7. Switch off the gas stove and add salt, mix well
  8. Garnish with fresh coconut and chopped coriander
