Carrot-Beans Sagu
Ingredients:
Chopped carrots – 1 cup
Chopped French beans – 1 cup
Steamed bottle gourd – 1 cup
Steamed sweet potato – 1 cup
Spice mix – ( Pepper, Cumin seeds, Coriander seeds, and methi seeds) Roasted and ground – 2-3 tsp
Freshly grated coconut and chopped coriander to garnish
Green chili 1
Curry leaves – 5-6
Unrefined Salt as per taste
Method
- Steam the veggies in the steamer for 10-12 mins
- Blend the steamed bottle gourd and sweet potato to a runny paste
- Heat a pan, add some curry leaves and dry roast
- Add the bottle gourd, sweet potato paste to the pan and add spice mix powder
- Add chopped chili and steamed beans and carrot chopped
- Let it cook for 2 mins
- Switch off the gas stove and add salt, mix well
- Garnish with fresh coconut and chopped coriander
