Sweet Potato Chocolate Mousse
serves – 4 people
INGREDIENTS
1 cup sweet potatoes
1/4 cup cacao powder
12-15 Dates (Kimia dates)
1/2 to 3/4 cup plant based milk
1/2 tsp vanilla extract
1/4 tsp orange zest
1/4 cup soaked cashew paste
1/4 tsp salt
Method –
1. Steam sweet potatoes
2. Make cashew paste adding little water to soaked cashews.
3. Add all above ingredients to mixer jar.
4. Grind all the ingredients till it becomes smooth and glossy in texture.
5. Fill in the mixer into the piping bag.
6. Pipe in the mixture into the bowls.
7. Our delicious sweet potato chocolate mousse is ready to serve.
Notes –
1. Steaming sweet potatoes gives soft texture than boiled sweet potatoes.
2. You may also use cashew butter instead of soaked cashew paste
3. You may skip orange zest and vanilla extract and replace it with cinnamon powder
4. You may you use any type of nuts i.e. hazelnut, almonds or walnuts
5. You may replace sweet potato with pumpkin or butternut squash.
