Basil Cowpea Hummus

Hummus is a Middle Eastern dip, spread, or savory dish. Traditionally made from cooked, mashed chickpeas blended with tahini, lemon juice, and garlic. The standard garnish in the Middle East includes olive oil, a few whole chickpeas, parsley, and paprika. In Middle Eastern cuisine, it is usually eaten as a dip, with pita bread.

We are replacing chickpeas with cowpeas and instead of olive oil, we are enjoying the goodness of walnuts.

Ingredients

1 cups cowpea, soaked overnight, and boiled

4-5 garlic cloves

2 tbsp of walnuts

1 cup of basil leaves, plus extra for garnish

¼ cup of tahini

2 Tbsp of lemon juice

2 green chilly

1 tsp of cumin seed powder

Salt to taste

 

Tahini

  1. Soak 1/4 cup of unpolished sesame seed for 3-4 hours.
  2. Grind it to a fine paste. Our Tahini is ready.

 

Method :

1.First prepare basil sauce: mix basil leaves, garlic, tahini, chilly, walnut, cumin seed powder in a blender and blend until a smooth paste.

2.Add the cowpeas and salt and blend again until smooth.

3.Transfer to a bowl and add the lemon juice. Mix well and check the seasoning. Finish with a sprinkling of walnut powder and fresh basil leaves on top. Serve with pita bread.
