Ingredients:
1 cup plant-based curd (peanut or coconut)
1/2 tsp grated ginger
3 tbsp chopped fresh coriander
7-8 mint leaves
1 tsp lemon juice
1/4 tsp black salt
1/4 tsp rock salt
2 cups of water
Optional: green chili and cumin powder
Instructions:
In a blender, add the plant-based curd, grated ginger, chopped coriander, mint leaves, lemon juice black salt, and rock salt. You may also add green chili and cumin powder if you like.
Blend everything together with 2 cups of water.Blend until everything is mixed well.
Pour the mixture into a jug or a tall glass and give it a good stir.
Taste and adjust the seasoning as per your liking.
Your buttermilk with plant-based curd is ready to serve.
You may chill it in the refrigerator for a while before serving if you prefer it cold.
