Ingredients:

250 gm baby potatoes
1/4 cup coconut milk
1/2 tsp Italian Mixed Herbs
Salt to taste

Instructions:

  1. Wash the baby potatoes thoroughly and place them in a pressure cooker with just enough water to cover them.
  2. Pressure cook until 2 whistles or till the potatoes are tender but not mushy. Let them cool for a few minutes.
  3. Combine the coconut milk, mixed Italian herbs, and salt in a mixing bowl.
  4. Toss the potatoes in the spice mixture until they are evenly coated.
  5. Lay them on a tray and using a flat-bottomed bowl, gently press each potato to flatten it slightly.
  6. Place the potatoes in the air fryer basket in a single layer and bake for 20-25 minutes at 180 deg C or until they are crispy and golden brown.
  7. Serve hot with tomato ketchup.
