250 gm baby potatoes
1/4 cup coconut milk
1/2 tsp Italian Mixed Herbs

- Toss the potatoes in the spice mixture until they are evenly coated.
- Lay them on a tray and using a flat-bottomed bowl, gently press each potato to flatten it slightly.
- Place the potatoes in the air fryer basket in a single layer and bake for 20-25 minutes at 180 deg C or until they are crispy and golden brown.
- Serve hot with tomato ketchup.
