Ingredients
1 small onion, finely chopped
2 tbsp garlic, finely chopped
1/2 green capsicum, finely chopped
1/2 red capsicum, finely chopped
1/2 cup green peas
3 tomatoes ( tomato paste)
1/2 tsp cumin seed powder
1 tbsp mixed herbs seasoning
1 tsp red chili powder
1 tsp chili Flakes
1 tsp oregano
1 tomato finely chopped
1 cup organic basmati rice, soaked
2 cups water
1/2 cup kidney beans (Rajma) boiled
1/2 cup corn, boiled
2 chilies chopped
3 tbsp finely coriander Leaves
3 tbsp finely chopped spring onion
Salt to taste

Method

1. Heat a pan, add onion, and garlic, and let the onion sauté for 2 minutes.

2. Add red & green capsicum, green peas, and tomato pulp, and let it cook for 2-3 minutes.

3. Add cumin seed powder, taco seasoning mix, red chili powder, chili flakes, oregano, tomato paste, rice, and water, cover it and let it simmer for 5 minutes.

4. Add kidney beans, corn, green chilies, and coriander leaves, and give it a mix.

5. Add salt, cover the lid and cook it till the rice is done.

6. Sprinkle some chopped spring onion.

7. Our Mexican rice is ready to serve.
