Ingredients:

  • 1 small sweet potato (about 60g), steamed and chopped
  • 20-25 dates, pitted
  • 1 teaspoon vanilla essence (or cinnamon/all-spice mix)
  • 50 ml coconut milk (or any plant-based milk), add more if needed
  • 3 tablespoons cacao powder
  • Pinch of salt
  • 80 grams peanut butter (or any nut/seed butter of your choice)

Instructions:

  1. Begin by steaming the chopped sweet potato until tender. Once cooked, allow it to cool slightly.
  2. In a blender or food processor, combine the steamed sweet potato, pitted dates, vanilla essence (or spices), coconut milk, cacao powder, and a pinch of salt.
  3. Blend the mixture until smooth and creamy. If needed, add more coconut milk to achieve your desired consistency.
  4. Once the mixture is smooth, add the peanut butter (or your chosen nut/seed butter) to the blender.
  5. Blend again until the peanut butter is fully incorporated into the mixture, creating a rich and velvety texture.
  6. Taste the spread and adjust the sweetness or flavoring as desired. You can add more dates for extra sweetness or more cacao powder for a richer chocolate flavor.
  7. Transfer the Peanut Butternutella spread to a clean jar or container with a tight-fitting lid.
  8. Store the spread in the refrigerator for up to one week, and enjoy it spread on toast, drizzled over pancakes, or as a dip for fruit slices. The possibilities are endless!
