Ingredients
For Salad
2 medium steamed potatoes
2 medium carrots
1 cup peas
1/2 cup steamed beans
1 large red bell pepper
1 small capsicum
1/4 cup pomegranate seeds
1 small handful of dill, chopped
Salt, to taste
For Mayonnaise Dressing
1 whole flesh of the tender coconut
1/4 cup soaked pumpkin seeds
1 tablespoon lemon juice
2 teaspoons nutritional yeast/potato 1/2
1/2 teaspoon mustard powder
Salt, as per taste
Method
1. Wash potatoes well. Don’t remove the skin. Steam the potatoes until well cooked.
2. Wash beans and peas. Chop beans to 1/2 inch in length. Steam beans and peas until well cooked. Let the above vegetables cool down.
3. Chop carrot, bell pepper, and capsicum finely.
4. For the mayonnaise, place all ingredients in a blender or a small mixie jar and blend until you get a smooth texture.
5. Add all veggies to a large bowl. Mix the mayonnaise with the vegetables. Sprinkle chopped dill leaves and pomegranate seeds.
6. Serve cold or at room temperature.
Note:
1. Tender coconut and be skipped and only soaked seeds like pumpkin, watermelon, and sunflower can be used.
