INGREDIENTS
2 large zucchini, spiralized
1/3 cup water
2 tbsp peanut butter
½ tsp tamarind pulp
1 clove garlic
4 dates
1 red chilly
1 tsp naturally fermented soy sauce
juice of 1 lime
a handful of cherry tomatoes cut in half
2 spring onions, chopped
½ cup chopped red bell pepper
2 tbsp roasted crushed peanut for garnishing
1 tbsp dry roasted black sesame seed

 

INSTRUCTIONS

  1. Put the zoodles into a large pot.
  2. Add the water,  tamarind paste, garlic, dates, chilly, soya sauce to a blender and blend. In a bowl add peanut butter and the blended mixture and mix well and keep aside
  3. In the zoodles, add the tomatoes, spring onions and red bell pepper, lime juice and sauce and mix together
  4. Sprinkle dry roasted black sesame seeds and crushed roasted peanuts

Variation:

  1. You can make veggie noodles with cucumber also. Try it with cucumber as well.
  2. If you wish you may also steam zoodles for 5 minutes
