INGREDIENTS
2 large zucchini, spiralized
1/3 cup water
2 tbsp peanut butter
½ tsp tamarind pulp
1 clove garlic
4 dates
1 red chilly
1 tsp naturally fermented soy sauce
juice of 1 lime
a handful of cherry tomatoes cut in half
2 spring onions, chopped
½ cup chopped red bell pepper
2 tbsp roasted crushed peanut for garnishing
1 tbsp dry roasted black sesame seed
INSTRUCTIONS
- Put the zoodles into a large pot.
- Add the water, tamarind paste, garlic, dates, chilly, soya sauce to a blender and blend. In a bowl add peanut butter and the blended mixture and mix well and keep aside
- In the zoodles, add the tomatoes, spring onions and red bell pepper, lime juice and sauce and mix together
- Sprinkle dry roasted black sesame seeds and crushed roasted peanuts
Variation:
- You can make veggie noodles with cucumber also. Try it with cucumber as well.
- If you wish you may also steam zoodles for 5 minutes
