Ingredients

Roasted corn kernels – 1 cup( used one cob)
Spring onion – 1.5 – 2 cup ( half bunch)
red cabbage – 1/4 cup
Tomatoes – 1/4 cup
Cucumber – 1/4 cup
Freshly Grated coconut – 1/4 cup
Green Capsicum – 1/4 cup
Grated Carrot – 1/4 cup
Boiled Kidney Beans – 1/4 cup
Lime Juice – 2 tbsp
Pepper powder- 1 tbsp
Chat Masala – 1 tsp
Black rock salt as per taste

Method
1. Finely chop Spring onion with the onions, Red Cabbage, Tomatoes, Cucumber, Green Capsicum
2. In a large boil add roasted corn kernels and all the chopped vegetables.
3. Now add Kidney beans, freshly grated coconut, lime juice, pepper powder, chat masala and black rocksalt.
4. Give it a nice stir.

Notes
1. Black rock salt and chat masala gives very nice chatpata taste to this salad. Add in chat masala and black rock salt just before serving. Also stir the salad just before serving.
2. You can also add roasted/boiled sweet potato to the salad.
3. You may use any vegetables of your choice.
4. After roasting the corn cob you may also apply little lemon and chilly powder and allow it to sit for few minutes and then remove the corn kernels.
