Cauliflower Soup | |
If you hate cauliflower, this recipe may just about change your mind. And, if you like cauliflower, you will enjoy this tasty, creamy concoction perfect for the rains. |
Ingredients
Cauliflower | 2 cups (diced) |
Coconut Milk | 1 cup |
Water | 2 cups |
Ginger | 2 inches (finely chopped) |
Green Chilly | ½ (finely chopped) |
Coriander Powder | 1½ tsp |
Cumin Powder Roasted | ½ tsp |
Turmeric Powder | ½ tbsp |
Black Pepper | 1 tsp (freshly ground) |
Lime Juice | 1 tbsp |
Salt | 1 tsp (or as per taste) |
For Coconut Milk
Grated Coconut | ½ cup |
Warm Water | ½ cup |
To make the coconut milk
- Grate the coconut.
- Add ¼ cup warm water to the grated coconut and blend to a smooth paste.
- Strain the liquid and squeeze the residue to extract the milk. Add the remaining water as required to the strainer and squeeze the residue one more time.
- You can blend again to adjust the consistency of the milk. Blending only once will give a thicker milk, while blending multiple times will give thinner consistency.
Directions
- Dice the cauliflower into small pieces.
- Finely chop the ginger and green chilly.
- To a pan, add the diced cauliflower, coriander powder, roasted cumin powder, and turmeric powder. Add 1 cup water, mix thoroughly, and steam for 7-8 mins or until the cauliflower is tender.
- Blend the steamed cauliflower along with the chopped ginger and chilly until creamy.
- Transfer the blended mixture to a pot and cook until the mixture starts simmering.
- Turn off the flame and add salt, lemon juice, and freshly ground pepper.
- Add coconut milk and give a good stir.
- Garnish with coriander. Yummy cauliflower soup is ready to serve.
Notes
- You can adjust the chilly and lemon juice as per your taste.
- Clean the cauliflower properly to remove any hidden worms.
