Cauliflower Soup
If you hate cauliflower, this recipe may just about change your mind. And, if you like cauliflower, you will enjoy this tasty, creamy concoction perfect for the rains. 

Ingredients

Cauliflower 2 cups (diced)
Coconut Milk 1 cup
Water 2 cups
Ginger 2 inches (finely chopped)
Green Chilly ½ (finely chopped)
Coriander Powder 1½ tsp
Cumin Powder Roasted ½ tsp
Turmeric Powder ½ tbsp
Black Pepper 1 tsp (freshly ground)
Lime Juice 1 tbsp
Salt 1 tsp (or as per taste)

For Coconut Milk

Grated Coconut ½ cup
Warm Water ½ cup

To make the coconut milk

  1. Grate the coconut.
  2. Add ¼ cup warm water to the grated coconut and blend to a smooth paste.
  3. Strain the liquid and squeeze the residue to extract the milk. Add the remaining water as required to the strainer and squeeze the residue one more time.
  4. You can blend again to adjust the consistency of the milk. Blending only once will give a thicker milk, while blending multiple times will give thinner consistency.

Directions

  1. Dice the cauliflower into small pieces.
  2. Finely chop the ginger and green chilly.
  3. To a pan, add the diced cauliflower, coriander powder, roasted cumin powder, and turmeric powder. Add 1 cup water, mix thoroughly, and steam for 7-8 mins or until the cauliflower is tender.
  4. Blend the steamed cauliflower along with the chopped ginger and chilly until creamy.
  5. Transfer the blended mixture to a pot and cook until the mixture starts simmering.
  6. Turn off the flame and add salt, lemon juice, and freshly ground pepper.
  7. Add coconut milk and give a good stir. 
  8. Garnish with coriander. Yummy cauliflower soup is ready to serve.

Notes

  • You can adjust the chilly and lemon juice as per your taste.
  • Clean the cauliflower properly to remove any hidden worms.
