Creamy palak soup| Eatright|

Ingredients

1. 1/2 cup onion diced
2.5-6 cloves garlic minced and crushed
3.2 medium steamed potatoes
4.2-3 cups vegetable stock/water
5.2 cups baby spinach / palak chopped
6.1 tablespoon lemon juice
7.¼ teaspoon pepper
8.1 cup thick coconut milk
9.Rock salt to taste

Instructions

1.In large pan sauté onions till they are translucent . Add splash of water as required so that onion gets cooked and becomes soft. Add garlic and sauté till garlic becomes fragrant.
2.Now add palak and saute until cooked
3.Remove from heat . Let the mixture cool.
4.Transfer the mixture to mixie jar. Add steamed potatoes, 2 cups of stock, lemon juice and pepper. Blend until ultra smooth.
5.Transfer the blended mixture to pan and simmer for 2 minutes. Switch off gas. Add coconut milk and salt.
6.Serve hot.
