Tomato Soup | Whole Food Vegan Plant based Recipe

Ingredients

  1. 4 to 5 medium sized Tomatoes
  2. 2 to 3 carrots
  3. 1 to 2 beetroots (Beetroot plays a very important colour changing role…so the soup can go from orange red to
    purple) Add to taste
  4. 1/2 cup of fresh grated coconut
  5. Salt and pepper to taste
  6. Basil or coriander leaves  to taste
  7. 1/2 inch – cinnamon stick

Method

  1. Chop all the vegetables coarsely.
  2. Now steam all the vegetables along with the cinnamon stick and 2 cups of water in a steamer for 12/15 mins.
  3. Once done, take out the cinnamon stick.
  4. Grind the everything else in a mixer.
  5. Simmer it for around 10 minutes.
  6. Add salt and pepper according to taste.
  7. You can add Basil leaves now or when you serve.

    1. We need to extract coconut milk and add it later after switching off the gas
