Ingredients
- 4 to 5 medium sized Tomatoes
- 2 to 3 carrots
- 1 to 2 beetroots (Beetroot plays a very important colour changing role…so the soup can go from orange red to
purple) Add to taste - 1/2 cup of fresh grated coconut
- Salt and pepper to taste
- Basil or coriander leaves to taste
- 1/2 inch – cinnamon stick
Method
- Chop all the vegetables coarsely.
- Now steam all the vegetables along with the cinnamon stick and 2 cups of water in a steamer for 12/15 mins.
- Once done, take out the cinnamon stick.
- Grind the everything else in a mixer.
- Simmer it for around 10 minutes.
- Add salt and pepper according to taste.
- You can add Basil leaves now or when you serve.
