Drumstick Soup
Unless you have lived under a rock, you already know that Moringa aka Drumstick is the new superfood on the block. It’s called the super-plant for its unique yet powerful properties that combat different ailments. This nutrient-dense plant has its roots in Ayurveda and was used as a medicine by our ancestors. The pods are an excellent source of oleic acid, vitamin C, and many vital B vitamins. This no-oil recipe is the perfect way to boost your immunity. 

Ingredients

Drumstick 2 cups (cut into 2” pieces)
Veg Stock 2 cups
Potatoes ½ cup (roughly chopped)
Corn Kernels ½ cup
Onion ½ cup (finely chopped)
Garlic 1 tbsp cloves (finely chopped)
Ginger 1 tbsp (finely chopped)
Green Chilly ½ tbsp (finely chopped)
Black Pepper Freshly ground to taste
Salt 1 tsp or as per taste
Spring Onion ¼ cup (finely chopped for garnishing)

Directions

  1. Cut the drumsticks into 2” pieces.
  2. Roughly chop the potatoes.
  3. Steam the drumsticks, potatoes, and half the corn kernels.
  4. Blend the potatoes and corn kernels by adding a bit of the veg stock.
  5. Blend the drumsticks with a bit of the veg stock separately and strain the mixture to remove the hard bits.
  6. Finely chop the onions, garlic, ginger, and green chilies.
  7. Heat a cast-iron skillet and sauté the garlic, ginger, and green chilies. 
  8. After a couple of minutes, add the chopped onions and sauté further.
  9. Keep on sautéing until the onions are translucent. 
  10. Add the rest of the corn and sauté further.
  11. After a couple of minutes, add the stock and bring to a boil. Keep boiling until the corn is done. 
  12. Add the blended corn and potato, and the drumstick mixture.
  13. Bring to a boil and turn off the flame.
  14. Add salt and pepper as per taste and give a good stir. 
  15. Garnish with chopped spring onion.

Notes

  • You can adjust the chilies as per your taste.
  • The reason for blending and straining the drumsticks separately is to remove the inedible fiber. Note that we are not straining the potato and corn mixture. If we blend the potato and corn with the drumstick, then we lose valuable nutrients while straining. 
  • Use vegetable stock, if possible. You can make the stock by boiling peels/stems/leaves of various vegetables in water for at least an hour. For 1 cup vegetable pieces, use 4 cups water and reduce the quantity to 2 cups. Add a small piece of bay leaf, 1 clove, and 2-3 garlic cloves for a better flavor. You can use water if you don’t have vegetable stock, but the flavor profile will be different.
